Recipe Ingredients

  1. 2 tsp. ground white pepper
  2. 1 tsp ground ginger
  3. 1 tsp sage
  4. 1 tsp mace
  5. 3 oz salt
  6. 6 oz bread crumbs -plain
  7. 10 lbs. fat pork butt(if lean add 1 lb fat back)
  8. 2 cups ice water

Recipe Instructions

  1. Grind meat-1/2 medium, 1/2 fine
  2. Add spices and mix very well
  3. Stuff into small casing links or make into compact patties.
  4. Leave overnight in Fridge before freezing.
  5. Fry till golden brown.
